It’s been a while since my last recipe so I thought it was time to post one! I’ve enjoyed this dish thoroughly over winter because it is basically just protein and carbohydrates and great before a big bicycle ride! It takes about 90 mins all up due to the long baking time in the oven (only about 10 mins prep time) so something to be aware of. Substitute your favourite sausages instead of the type I use. In the original recipe from Bill Granger he uses Italian sausages. This recipe serves 4 (or just me for three days!).

Preheat oven to 200 degrees celsius.
Slice the sausages into 4cm bits and place in a large roasting dish.
Add the potatoes, paprika, rosemary and salt & pepper.
Crush the garlic with the palm of your hand on a chopping board and add to the pan with the skin still on. Drizzle with olive oil and toss to combine.
Place in the oven and cook, stirring occasionally, until the potatoes are almost golden brown.
At this point, tear up the ciabatta into large chunks, drizzle with a little olive oil and season with salt & pepper before adding to the roasting dish.
Cook for a further 5-10mins until the ciabatta is golden brown.
Serve immediately with the continental parsley. Enjoy!
